Winemaker Description

This wine is generous and complex with aromas of cherry cola, cassis and chocolate. Some savory notes and hints of citrus zest and mint. This wine is intensely aromatic and develops in the glass as layers are revealed. This full-bodied wine is powerful yet exhibits grace and finesse. A rich and dense mid-palate evolves into a muscular and graceful finish.

Expert Review - Vintage 2021 

Tasting Panel 100 Points | Awe-inspiring, with dramatically structured tannins, this wine possesses an opulence matched by its seductive texture of soft suede as well as its grip. Blueberry and pomegranate are intense and showy on the finish.

Vinous 95+ Points | The 2021 Cabernet Sauvignon Tomahawk Vineyard emerges from the youngest block on the vineyard, planted nearly twenty years ago. Readers will find a pure, voluptuous wine that is immediately engaging. Succulent dark cherry, plum, espresso, licorice, incense and new leather fill out the layers effortlessly. I imagine the Tomahawk will require only modest cellaring.

Jeb Dunnuck 95 Points | The 2021 Cabernet Sauvignon Tomahawk Vineyard is slightly brighter and more perfumed than the Ganymede, offering a brilliant array of crème de cassis and black raspberries as well as spicy oak, graphite, and spring flower notes. It has classic Stags Leap vibrancy and complexity, is medium to full-bodied, and has plenty of polished tannins as well as a great finish. It deserves 4-6 years in the cellar, and I suspect this will be very long-lived. It's a gorgeous wine that shows the style of the vintage to a T.

Decanter Magazine 94 Points | From a small group of vines at the southern edge of the Stags Leap District estate property called Tomahawk Vineyard. A very pretty and elegant wine with fantastic blackberry fruit nuanced by white pepper, sage, and iron-volcanic minerality. Medium to full-bodied with juicy mixed berry fruits, very fine tannins that have a granularity, which builds with intensity before getting wiped clean away by rather scintillating acidity that has a crisp, citrusy quality. Long, lean, and focused, with hints of bay laurel on the finish. A really lovely effort.

James Suckling 94 Points | Notes of ripe blackcurrants, blackberries, pinewood, grilled herbs and spices. Full-bodied, dense and structured with very fine, velvety tannins.

Wine Spectator 93 Points | Juicy, solid and focused in feel, with a core of black currant and blackberry preserves backed by licorice and singed apple wood notes, plus a hint of sweet tobacco through the finish. Drink now through 2040. 1,289 cases made.

Chitosetsuru Junmai Daiginjo Suisei — Hokkaido, Japan

Nippon Seishu — the brewery behind Chitosetsuru — is one of Hokkaido's most celebrated sake producers, based in Sapporo and dedicated to expressing the unique terroir of Japan's northernmost main island through the art of sake brewing. Hokkaido is a region of exceptional natural resources: pristine soft spring water, cold winters ideal for slow, controlled fermentation, and a growing tradition of cultivating sake-specific rice varieties uniquely suited to the local climate. Chitosetsuru Junmai Daiginjo Suisei is one of the first sakes ever made from Hokkaido's native 'Suisei' rice variety — a local grain with low starch content that allows for a clean, dry sake of excellent structure and remarkable elegance. The rice is milled to 45% of its original size — the hallmark of Junmai Daiginjo, the highest classification in sake — removing the outer layers to reveal the pure, aromatic core of the grain. The NV Extra Brut Rosé ADN de Meunier is a classic-layered and supple with rose petals, mint, dried cherry, mint, spice and orange peel. Assembled with the inclusion of 10% still red Meunier, the Rosé is exquisitely nuanced and super expressive, offering great depth and tons of personality.

Crafted from a 20-hour maceration of Pinot Noir grapes, each parcel is vinified separately in stainless steel and epoxy-lined tanks. The wine is bottled according to the lunar calendar and undergoes secondary fermentation in the bottle, preserving the unique characteristics of each terroir.

This meticulous approach highlights the natural expression of the Meunier grape, resulting in a fresh, vibrant rosé with nuanced red fruit, subtle spice, and floral notes. The wine balances elegance with intensity, offering a complex, layered palate and a delicate, persistent mousse.

This is a deep ruby-colored wine that combines aromas of violet flowers, raspberries and spices. It shows an impressive structure and also a good concentration of fruit on the palate. This is an age worthy Beaujolais that could be put aside for a few years PRODUCTION NOTES-Length of alcoholic fermentation is 20 days. Maceration technique involves Semi Carbonic. Aged in 228 L French Oak Barrels for 9 months.

The Churchill flagship quinta has produced a serious style of Port. Dry and richly structured, it also has jammy red-berry fruits that will cushion the firmness.

Churchill’s purchased the estate of Quinta da Gricha in 1999, and it quickly formed the spiritual heart of the house, and is where all the wines are made today before being sent downriver for aging in Vila Nova de Gaia. Winemaker Description.

Cidrerie du Vulcain's Cidre La Lande Foye is a gorgeous, French cider from Jacques Perritaz's Normandy based orchard cidery. Jacques Perritaz, a botanist by training, is one of the leading figures in the cider revival. Originally based in Switzerland, he moved a few years ago to the Normandy bocage, where he has established himself on a 12-hectare estate boasting over fifty varieties of pear. Jacques' ciders and perries are characterized by superb balance and finesse.

This cider is made from a blend of different apple varieties such as Fréquin rayé, Petit jaune, Binet rouge, Douce Moen, Kermerrien... They are hand-harvested on the Normand estate. 

Winemaker Description 

Cidrerie du Vulcain's Poire (Perry) Comment is a perry made from late-season perry pear varieties (end of October-December) such as Plant de Blanc, Fausset and Cloche, Gaubert, Courcou, and Rouge Vigné.

Pear cider from Domfrontais, Normandy made from late season varieties. 2 years aging in bottle and then disgorged. A little residual sugar.

The pure perry juice is fermented on its own wild yeasts and coarsely filtered on white clay. Ancestral method without disgorging: partial fermentation in stainless steel and resin vats, then aging in bottle. No added sulfites.

Cinco Jotas Jamón Ibérico de Bellota — Black Label, 100% Pata Negra (1.5 oz.)

Widely regarded as the finest ham in the world, Cinco Jotas Jamón Ibérico de Bellota Black Label is the ultimate expression of Spanish charcuterie. Sourced exclusively from 100% pure-bred Ibérico pigs — the legendary Pata Negra — raised free range in the ancient dehesas (oak meadows) of Jabugo in southwest Spain, this is acorn-fed ham at its most extraordinary.

The process is unhurried by design: each pig takes nearly two years to reach full development, roaming freely and feeding on bellotas (acorns) that impart the ham’s signature nutty, complex flavor. After slaughter, the legs are naturally cured for a minimum of three years in Cinco Jotas’ historic cellars in Jabugo — developing an unparalleled depth of flavor, silky marbled fat, and a long, lingering finish.

Tasting Notes

Two producers, one state – this is the 4th edition of La Colección Mixteca from Cinco Sentidos. This yearly release is made up of tiny batches that highlight the unique, rustic production styles used throughout the mountainous Mixteca region of south-central Mexico.

Producer Description 

La Coleccin Mixteca Edicin 4 is a curated selection of small-batch agave spirits crafted in the rustic distilleries of the mountainous Mixteca region of Oaxaca and Puebla. Each bottling explores the maestro mezcaleros interpretation of subjecting agave endemic to the region to peculiar production methods and styles that have largely fallen out of favor in modern times.

This batch of agave Pizorra (a. Marmorata) was distilled by maestro mezcalero Delfino Tobn Meja in his hometown of San Pablo Ameyaltepec, Puebla. Along with friends and family members, Delfino wild-harvested these massive, white-striped agaves in the outskirts of his hometown, whose name roughly translates to "the mountain where water is born" in Nahuatl.

After harvesting, Delfino roasted the agave with tlahuicole firewood in an underground conical pit oven for four days. He then milled the cooked agave with a mechanical shredder and allowed them to ferment naturally with spring water for about a week. Once fermentation was complete, he distilled the mash and tepache once in a custom-made, hybrid 3-plated copper still. Proofed with heads, hearts, and holanda by Delfino. 

A cornerstone of the classic dry martini — Cinzano Extra Dry Vermouth has been crafted in Italy since 1757, bringing centuries of vermouth-making tradition to every bottle. Pale and crisp, it's defined by its delicate balance of dry white wine, aromatic herbs, and subtle botanicals, delivering a clean, refreshing character that elevates any cocktail it touches.

The nose offers fresh wild herbs, citrus zest, and a whisper of floral notes. On the palate it's bone dry and light-bodied, with gentle bitterness and a clean, lingering finish. Essential for any well-stocked bar cart — and equally enjoyable on the rocks with a twist of lemon.
