About the Wine

Nittnaus is one of Burgenland’s most respected biodynamic producers, farming with Respekt certification — Austria’s most rigorous biodynamic standard. The Kalk und Schiefer (“Limestone and Slate”) Blaufränkisch is sourced from vineyards in and around Jois am Leithagebirge, where the distinctive limestone and slate soils impart a cool minerality and inner tension to the wine. After manual harvesting and sorting, the grapes are fermented spontaneously in wooden vats and aged in used Tonneaux after slow basket pressing.

She has since consulted in Bordeaux, collaborated with Californian winemakers, and sits on the board of the Pinotage Youth Development Academy — which provides technical training and personal development for young South Africans entering the wine industry.

Paltrinieri is one of the benchmark producers of serious Lambrusco — the kind that has nothing to do with the sweet, mass-market versions that defined the grape's reputation for decades. Based in Sorbara, in the heart of Emilia-Romagna, the estate farms its vines with care and bottles wines that are dry, vivid, and deeply tied to the region's food culture.

The Solco is their entry point and one of the most satisfying bottles at its price. Pheasant's Tears is one of Georgia's most celebrated natural wine producers, founded by Gela Patalishvili — an 8th-generation winemaker from the Kakheti region — and John Wurdeman, an American painter who fell in love with Georgia and its ancient wine culture in 1998. Together, they have dedicated themselves to preserving and reviving Georgia's extraordinary 8,000-year-old winemaking heritage, farming around ten indigenous grape varieties without pesticides or herbicides and vinifying everything in qvevri — traditional clay amphorae buried in the earth, used in Georgia since the Neolithic era.

Kisi is a rare and ancient Georgian white grape variety grown almost exclusively in the Kakheti region, in the foothills of the Caucasus Mountains. At Pheasant's Tears, it is vinified in the traditional Georgian manner: fermented and aged in qvevri with extended skin maceration of six months — producing what Georgians call an "amber wine" and the rest of the world has come to know as "orange wine." The result is a wine of extraordinary depth, texture, and complexity that has no real equivalent in the conventional wine world.

The 2024 Kisi is deep amber-gold in the glass. The nose is captivating — dried apricot, quince, honey, beeswax, dried flowers, and a hint of walnut, with an earthy, almost ancient quality that speaks directly to the qvevri. Domaine Jean Foillard Morgon Côte du Py Organic — Beaujolais 2024

Jean Foillard is one of the founding members of Beaujolais’s legendary Gang of Four — alongside Marcel Lapierre, Jean-Paul Thévenet, and Guy Breton — the group of vignerons who, inspired by the teachings of Jules Chauvet, staged a quiet revolution against the industrial Beaujolais of the 1980s. Their manifesto: old vines, no synthetic herbicides or pesticides, late harvesting, rigorous sorting, minimal sulfur, no chaptalization, no filtration. The result is Morgon as it was always meant to be — structured, mineral, and age-worthy, with none of the bubblegum and banana aromas that plagued the region’s commercial wines. About the Wine

Planted in the late 1970s, these rare, near-extinct vines with massive, gnarly trunks produce unique and fascinating fruit. Since Jolie-Laide’s first Fanucchi Wood Road Trousseau Gris bottling in 2010, the wines have shown a strong structural foundation with vintage-driven character.

In 2024, Mother Nature yielded half the fruit of 2023 — making this Trousseau Gris as rare as the old vines that produced it. To preserve natural acidity, the grapes were harvested early and foot-stomped for a three-day whole-cluster cold soak. This gentle maceration adds subtle phenolic texture, lifted aromatics, and a gorgeous rose-gold hue. The juice was then moved to a combination of neutral puncheon and stainless steel for a slow, cold native yeast fermentation, followed by a 6-month élevage in neutral puncheons and barrique to preserve freshness.

The Marnaveli Kisi-Khikhvi Amber Wine 2023 is a traditional Georgian "orange" or skin-contact wine produced in the Kakheti region. This wine is crafted using the ancient Qvevri method—fermenting and aging the grapes in large, beeswax-lined clay vessels buried underground.

Pheasant's Tears is one of Georgia's most celebrated natural wine producers, founded by Gela Patalishvili — an 8th-generation winemaker from the Kakheti region — and John Wurdeman, an American painter who fell in love with Georgia and its ancient wine culture in 1998. Since 2007, they have farmed their vineyards with minimal intervention, using wild yeasts and traditional qvevri winemaking to best showcase the extraordinary terroir of Kakheti. The name comes from an old Georgian tale claiming that only the best wine could make a pheasant cry.

Tibaani is a sub-zone of Kakheti, in the foothills of the Caucasus Mountains, where the ancient Georgian grape varieties Rkatsiteli and Mtsvane have been cultivated for millennia. This blend of the two varieties is vinified in the traditional Georgian manner: fermented and aged in qvevri — traditional clay amphorae buried in the earth — with a full month of skin maceration, producing a wine of remarkable depth, texture, and complexity. The wine is unfiltered and unfined, allowing for natural sedimentation in the bottle.

Magoutes Siatista Rosé — Macedonia, Greece 2025

Magoutes Vineyard sits at 800 metres above sea level in the rugged, inhospitable region of Siatista in northern Macedonia — one of Greece's most compelling and least-known wine territories. Winemaker Dimitri Diamantis practices radical low-intervention viticulture: spontaneous fermentation, gentle racking off skins, and aging in old barrels to finish. This rosé is a blend of 80% Xinomavro and 20% Moschomavro — an über-rare indigenous variety (meaning "black Muscat") grown almost exclusively by Diamantis. Fiorfiore is produced from a single vineyard of Grechetto di Todi (clone G5) planted in 1990, trained Guyot on whitish clay soils rich in marl, limestone, and chalk. Our 2019 Research Bianco is a skin-fermented white wine blend in which the proportions and varieties change with each vintage. A good friend supplied the grapes from a "research" vineyard on the East End. All the grapes were grown together (a field blend), hand-picked, de-stemmed, crushed by foot and punched down by hand.
