100% Chardonnay from clay and chalk soils of the Cote d'Auxerre.  This is the purest of pure expressions of Chardonnay, offering up enticing aromas of mirabelle plum, and ripe pear.  It is fresh and lively on the palate, making it a perfect companion to soft ripened cheeses, cold cuts,and paté.

Classic, mineral-driven Chablis with a crisp, elegant profile. Bright citrus, green apple, and subtle floral notes lead into a fresh, lively palate with pronounced minerality and a clean, saline finish. Fermented and aged in stainless steel with time on the lees, preserving purity and tension.

Our Notes:

Pure, flinty, and edgy, this is classic Village level Chablis.  The white orchard fruit and citrus character is restrained and delicate.  Aged in stainless steel tanks, it spends 10 months on the fine lees.  This is a wine to be enjoyed with salads, fowl, and other lighter dishes, as well as soft cheeses.

Defaix Frères Rully 1er Cru Les Cloux — Burgundy 2022

Defaix Frères is a family domaine with deep roots in the Côte Chalonnaise, farming 11 acres of Rully Premier Cru holdings that have been in the family for generations. Les Cloux is one of Rully’s most prized Premier Cru vineyards — a south-facing site that captures the full warmth of the Burgundian sun while retaining the limestone-driven minerality that defines the appellation. The 2022 vintage was a gift: a warm, dry growing season that produced Chardonnay of exceptional ripeness and concentration, with the structure to age gracefully for a decade or more. At this price, it is one of the most compelling Premier Cru values in all of Burgundy.

The color is a luminous golden straw. The nose is refined and expressive: ripe citrus, green apple, white peach, and delicate white flowers, layered with warm spice and a signature note of roasted hazelnut from judicious oak élevage. Premier Cru Burgundy at an honest price — Defaix Frères Les Cloux is the Côte Chalonnaise at its most compelling.

Our Notes

This is a special wine, coming from a 1 hectare monopole adjacent to the family home in Rully.  Aged in 50% new oak for 18 months, it is still a bit tight, with grippy tannins.  But underneath the structure are layers of beautiful plum and red cherry fruit, crushed red flowers, and subtle earthiness.  This is a wine that will develop beautifully for the next five to ten years. 

Expert Rating

91 Points Jasper Morris: More density to the purple colour and the nose suggests greater structure, and a slightly riper, fuller style of pinot, raspberries taking over from the cherries. Just a little peppery note at the back of the palate which works well to balance the more voluptuous fruit. Very much more complete than the already attractive Préaux. Drink from 2025-2030.

This 100% Pinot Noir is hand sorted, destemmed, and aged in used oak for 12 months.  This is a friendly red with loads of sunny, delicious red fruit, delicate whispers of smoke, and unmistakable Burgundian minerality.  The tannins are present but fine, making the wine super approachable.  This is the kind of red I would enjoy sipping by a crackling fire, reading a Victorian novel.  This would pair beautifully with rabbit, venison, duck, or anything mushroom.

Sourced from a single grower partner DeLoach has worked with since 2009, with fruit primarily from the Delta region where the cooling influence of the Sacramento River preserves natural acidity and creates ideal conditions for Pinot Noir. Grapes are de-stemmed and cold-soaked for four days to extract color, followed by two weeks of maceration before fermentation — yielding softer tannins and layered flavors. The vineyards are California Sustainable Winegrowing Alliance (CSWA) certified, with a focus on reducing carbon footprint as well as agricultural impact.

Before Mencía became the darling of Northwestern Spain, Pétalos was already making waves. Descendientes de José Palacios — the project of Álvaro Palacios and his nephew Ricardo Pérez Palacios — has been the defining force in Bierzo’s modern renaissance, farming old-vine Mencía on ancient slate soils with biodynamic and organic principles. Pétalos is their entry wine, but it carries the full weight of the estate’s philosophy: precision, transparency, and a deep sense of place.

The 2021 is widely regarded as the finest vintage of the 2020–2022 trio. Lower alcohol than ever (13.5%), it shows a lighter, more delineated profile with the juicy, aromatic Mencía character that defines the appellation. The nose is enticing: red berries, violets, wild herbs, white pepper, and a whisper of agave. On the palate, a velvety mouthfeel and very fine, chalky tannins frame nimble red fruit with elegant structure and a long, gourmand finish. Magoutes Siatista Rosé — Macedonia, Greece 2025

Magoutes Vineyard sits at 800 metres above sea level in the rugged, inhospitable region of Siatista in northern Macedonia — one of Greece's most compelling and least-known wine territories. Winemaker Dimitri Diamantis practices radical low-intervention viticulture: spontaneous fermentation, gentle racking off skins, and aging in old barrels to finish. The vineyard holds sway over everything.

This rosé is a blend of 80% Xinomavro and 20% Moschomavro — an über-rare indigenous variety (meaning "black Muscat") grown almost exclusively by Diamantis. The result is a wine of delicate partridge-eye color, subtly aromatic with hints of redcurrants and fraises de bois, wonderfully fruity within a structured core of zingy acidity.
