The Joel Richard Escencia is 100% pure Colombian rum, aged in used American oak bourbon barrels for 25 years. Fermented from pressed sugar cane juice for a distinctive style. Once the fermentation is complete 70% has been distilled in a continuous column and 30% in an alembic pot. This combination is a great balance between complexity and smoothness.

Sakata Shuzo has been brewing sake in Yamagata Prefecture — in the Tohoku region of northern Japan — for generations, drawing on the soft, mineral-pure waters of Sakata and the cold mountain climate that makes Yamagata one of Japan’s most celebrated sake-producing regions. The brewery’s Jokigen label (“good mood” in Japanese) is a fitting name for a sake built around pleasure, generosity, and the kind of fruit-forward character that makes it as welcome at the casual table as at the considered dinner.
The Green Label Junmai is brewed from Hyogo-grown Yamada Nishiki rice — the undisputed king of sake rice — milled to 70% and fermented with Jokigen’s proprietary house yeast. Yamada Nishiki is prized for its large grain size, low protein content, and exceptional ability to develop glossy texture and tropical fruit character during fermentation. Jolie Laide SYRAH North Coast 2020 750ml
Winemaker Description
Syrah Laide translates loosely to Pretty-Ugly, a French term of endearment to describe something that is unconventionally beautiful, a dogma that is applied to each cuvée. "Hawks Butte adds slightly more density and fruit while still wildly fresh with lithe tannin and Halcon compliments with brooding structure. Violet, camphor, white pepper and cedar" - Jolie-Laide 100% Syrah, grapes were planted on two vineyards (Halcon and Hawkes Butte) both at high elevation.
Grapes are left on stems, crushed by foot and fermented with very light punch downs. The juice is then placed into neutral oak for 10 months. 12-25ppm added SO2 depending on vintage and cuvée.
Jolie-Laide Melon de Bourgogne Chalone 2024
The Melon hails from the decomposed granite and limestone soils of the Chalone appellation, on a high elevation south-facing site planted in 1985 by the legendary DIck Graff. Overlooking Monterey from the east side of Salinas Valley, the site benefits from diurnal swings of warm days, cool nights, and a balanced coastal influence. This unique terroir offers excellent drainage and mineral-rich soils, ideal for producing wines of freshness, focus, and minerality. The fruit was whole-cluster pressed, settled, and transferred to concrete eggs and stainless steel for fermentation before aging for 6-months on lees in concrete eggs. About the Wine
Planted in the late 1970s, these rare, near-extinct vines with massive, gnarly trunks produce unique and fascinating fruit. Since Jolie-Laide’s first Fanucchi Wood Road Trousseau Gris bottling in 2010, the wines have shown a strong structural foundation with vintage-driven character.
In 2024, Mother Nature yielded half the fruit of 2023 — making this Trousseau Gris as rare as the old vines that produced it. To preserve natural acidity, the grapes were harvested early and foot-stomped for a three-day whole-cluster cold soak. This gentle maceration adds subtle phenolic texture, lifted aromatics, and a gorgeous rose-gold hue. The juice was then moved to a combination of neutral puncheon and stainless steel for a slow, cold native yeast fermentation, followed by a 6-month élevage in neutral puncheons and barrique to preserve freshness.

Decanter 94 Points | Drouhin's Clos des Mouches 2023 exemplifies the vintage's potential for delicious whites. The wine has lush, forward aromas of Mirabelle plums and quince with hints of marzipan, butter and a suggestion of stylishly smoky reduction. The texture is supple and dense, but the richness is kept in balance and the extract carries the wine to a lingering finish. Parts of the 7ha vineyard have been replanted; the old vines that produce this bottling have delivered a wine of great character.

An outstanding wine. Pale yellow color. Complex floral nose of white lilac and white rose. Once open, fruity aromas come to the fore, evolving towards grilled hazelnut and almond. When the wine is more mature, the nose is surprisingly strong and fifteen minutes of aeration produce wonderful notes of white truffle, citron (cedrat), honey and nutmeg, elegantly meshed together. Very lively on the palate. Its rich texture is in evidence, but also its structure and minerality. It is round, but never heavy. Harmonious fullness in the aftertaste. This wine allies remarkably the complexity and elegance of a Bâtard-Montrachet with the power of a Corton-Charlemagne.

There is more clay here, and less limestone than in Les Cras, and the tannic structure is not as firm. The grapes are from Drouhin's massive 6.75ha here, not far from Pommard; they are partially destemmed and fermented on native yeasts before ageing in cask (25% new) for 14–18 months.

Our Tomme de Savoie Fermière is made in mountain farms with raw milk from their own cows and where it’s aged in it's own underground cave. Although these Tommes are usually sold directly at the farmhouse, we’re excited to have been able to squeeze-in a batch for our enjoyment :-)

With an almost Bordeaux-like style, medium to full-bodied richness, present tannins, and a great finish, it's a beautiful, classic Cabernet Sauvignon blend from this team that's going to benefit from 4-5 years of bottle age and keep for two decades or more. Wine Advocate 96 Points | More elegant and refined than the Napa Cab, the 2019 Insignia features restrained cedar and vanilla notes (despite spending two years in 100% new French oak) and delicate herbal shadings accenting cassis and black cherry fruit. Full-bodied, velvety and somewhat open-knit on the palate, it turns plush and long on the finish, adding a touch of warmth. Production this year is approximately 17,000 cases, reflecting the increased volume coming from recently replanted vineyards. It's remarkable what a good job they continue to do with this bottling year after year, without compromising on quality.
Jeb Dunnuck 99 Points | Another beautiful wine from this team, the 2019 Insignia is mostly Cabernet Sauvignon but includes smaller amounts of Merlot and Malbec, brought up all in new barrels, sourced from seven estate vineyards. It has a classic varietal and incredibly complex nose of crème de cassis, freshly sharpened pencils, green tobacco, and damp earth, with a kiss of background sappy spring flowers. Seemingly from a cooler year with its freshness, vibrancy, and herbal, floral character on the nose, it's nevertheless full-bodied and beautifully concentrated on the palate, with ultra-fine tannins, a seamless, layered mouthfeel, and a gorgeous finish. Unquestionably up with the finest vintages of this cuvée, this is legit awesome juice that’s going to offer incredible pleasure over the coming 20-25 years. Hats off to winemaker Ashley Hepworth.

Sumptuous dark fruit mocha leather sweet spice and tobacco are all amplified in an Insignia endowed with tremendous textural intensity and plenty of soft contours. I imagine the 2019 will age well for years but it will also drink well with minimal cellaring.

The Judean Hills Blanc reflects the character and quality of the vineyards, located in the ancient region of Judean Hills. The color on this wine is a light gold, its not a deep color but its a pretty light gold.
The aromas are really nice, citrusy, melony, gooseberries, but also some yellow pear and green apple. There are lots going on fruit wise on the nose which makes it a really nice, medium to full bodied wine.
The acid comes on in the mid palate with more citrus in the mouth and a big acid on the finish. This wine is still going strong. It has a fairly long finish for a white wine, with some nice residual acid and melon flavor on the back.
The wine is super enjoyable with its fairly big white wine flavors. It drinks beautifully today and will keep developing in the bottle during the next 2-3 years.
