González Byass Noé Pedro Ximénez VORS — 30 Years, Jerez

Noé is one of the rarest and most extraordinary sherries in existence. Produced by González Byass — the historic house behind Tio Pepe — from sun-dried Pedro Ximénez grapes with a final average age of over 30 years, this VORS (“Very Old Rare Sherry”) is a wine of almost incomprehensible concentration and complexity.

With a sugar level of 400 grams per liter, Noé pours like liquid velvet: deep mahogany, viscous, and intensely aromatic. The nose layers buckwheat honey, Black Forest cake, dried fig, raisin, chocolate, cinnamon, and a haunting balsamic depth. Pazo de La Cuesta is a boutique estate in Ribeira Sacra, one of Spain’s most dramatic and exciting wine regions — where steep, terraced vineyards plunge toward the Sil River in Galicia. The Batanero is made from Brancellao, a rare indigenous red grape variety that thrives in the region’s granite soils and cool Atlantic climate. Elegant red with purple nuances and a medium-high depth. Deep nose of cherry, blackcurrant, stone fruits, compotes, and sweet toasted wood. Very direct attack on the palate where freshness and the passage of time prevail. Aromatic nuances emerge at retronasal, calling for another sip to recall them.

I’m thrilled to kick off 2025 by introducing my latest project: 67 Wine Somm Series Petit Moscato 2024.Once again, I’ve drawn inspiration from the vibrant and dynamic wine culture of NYC! The label design aligns seamlessly with the rest of our 67 Wine Petit Somm Series, maintaining a consistent and stylish aesthetic. Moscato is one of the most popular wine categories in New York, and my goal was to craft a wine that pairs an elegant label with authentic, high-quality juice.

Tasting Notes:

The wine presents a pale lemon-yellow hue with bright highlights. On the nose, it is intensely aromatic, as Muscat Blanc à Petits Grains is renowned for its fragrant character. The palate is lively, offering sweet, fresh fruit flavors of orange, honeydew melon, and peach. A subtle sweetness transitions beautifully into a finish accented with delicate notes of white blossom flowers.

In my view, this Moscato pairs perfectly with spicy Szechuan cuisine, Japanese and Indian dishes, tapas-style appetizers, blue cheeses, and chicken liver pâté.

The Flying Bicycle Rioja Vegan Organic 2024

67wino.shop Professional Review by Oscar Garcia Moncada: 20-35 year old vines. Certified Organic and Vegan; 100% Tempranillo entirely aged in concrete vats. Not filtered but lightly clarified. Notes of red berries on the nose with an enticing mouth-feel. Red currant, juicy blackberry. Medium-bodied with crisp and enticing finish.

Winemaker's Story

"The Flying Bicycle" is Germán Blanco's new project in Rioja Baja. With the help of fellow oenologist Javier Collio, Germán sources fruit from certified organic vineyards in the Navarra part of the appellation. The vineyards are dry-farmed with an average age of thirty-five years, grown in a mix of clay and limestone. Following the Milú philosophy of "happy wines made from happy grapes," the grapes are de-stemmed and fermented at cold temperature from native yeasts. A slight maceration before the end of fermentation creates a delicate and fresh wine. No oak is used, and the wine stays in concrete tanks for five to six months.

Winemaker Description

Impeccable harmony between the notes of ripe fruit and the aromas of carbonic maceration. Sweet, full-bodied and a long, pleasant finish.

Owned and run by winemaker Ignacio Valdera, Bermejos is situated on the easternmost Canary Island of Lanzarote. This wine is made with 100% Listán Negro fermented via carbonic maceration. Listán Negro is hardly grown at all on the European mainland—it was wiped out by the phylloxera epidemic—but it is widely planted on the Canary Islands.

Oscar Garcia 67wino.shop | Bodegas Los Bermejos Listan Negro is made with 100% Listan Negro. The rich volcanic soils of the Island of Lanzarote serve as the catalyst for this tantalizing red. Aromas of black olives, green herbs and that unmistakable "volcanic" minerality are the primary notes on the nose. Medium-bodied with notes of preserve dark fruit, black pepper and earthy undertones. The finish is fairly savory with fruity nuances.

A vermouth unlike any other — Gonzalez Byass La Copa Rojo Sweet is built on a Cream Sherry base rather than traditional wine, drawing on nearly two centuries of sherry-making expertise from Jerez, Spain. Founded in 1835, Gonzalez Byass brings a distinctly Andalusian character to the vermouth category: smooth, velvety, and richly aromatic in a way that standard vermouths simply can’t replicate.

The base is a blend of 75% Palomino and 25% Pedro Ximénez (PX) grapes, infused with six botanicals — wormwood, clove, nutmeg, cinnamon, orange peel, and savory. The Wine Advocate 94 Points | I loved the nose of the 2014 Viña Bosconia Reserva, a red that sells at an incredible price for the quality, the problem is (like all their wines) finding it... They had to accelerate the harvest to avoid botrytis caused by the abundant rain during the harvest. This is a blend of 80% Tempranillo, 15% Garnacho and the remaining 5% Graciano and Mazuelo, fermented in old oak vats with their yeasts and matured in neutral American oak barrels for no less than five years. It's elegant and nuanced, developed but young for its age, with a seamless palate and very fine tannins, with energy and light. It has 13.5% alcohol, a pH of 3.3 and 6.7 grams of acidity, notable parameters of freshness. 80,000 bottles produced. It was bottled in March 2022.

Vinous 94 Points | The 2014 Viña Bosconia is 80% Tempranillo with 10% Garnacha, 5% Graciano and 5% Mazuelo from the El Bosque vineyard in Haro, Rioja. Garnet in hue, it opens with cassis, cola and oak-driven aromas. The palate is youthful and smooth, with well-integrated tannins, black fruit and anisette at the finish. Still growing, it’ll develop greater complexity with more time in bottle.

It fermented in stainless steel and matured in French and American oak barrels for two years and was kept in bottle for another three. It has a textbook spicy nose with sweet spices, smoke and toast, berry fruit and herbs, a touch of forest floor and truffles, with a moderate 13.5% alcohol and balancing freshness.

Harveys Bristol Cream features flavors of roasted nuts and raisins, with a subtly spicy finish. Harveys Bristol Cream is usually served well chilled as an aperitif, as an after-dinner drink straight, or on the rocks with a wedge of lime or slice of orange.

The ice lessens the viscosity and the citrus lowers the sweetness to create a refreshing drink. As a dessert wine, serve with cheesecake, flan, bread pudding or crème brulée.

The Wine Advocate 93 Points | The 2022 De La Finca comes exclusively from their own vineyards, 60% Xarel.lo, 30% Macabeu and 10% Parellada, and has the added complexity and nuance from a longer élevage, no less than 30 months in bottle with lees and closed with a cork after refermenting. It's bone dry, not adjusted, and sold as a brut nature. It has a bright, almost fluorescent yellow color and a very expressive nose with notes of yeasts and Mediterranean herbs, subtler, more complex and with smaller, more integrated bubbles and a vibrant, clean and precise palate, super tasty. It comes from the plots on slopes already classified by Pepe Raventós's grandfather. Here, they have lower yields, accentuated by the vintage, which is more marked in the wine, as it's always from the same plots. The whole clusters are pressed, looking for longer aging potential, and fermentation is in concrete, always thinking about a longer-lived wine. It's a generous wine from a generous year. 55,000 bottles and 1,000 magnums were produced.

James Suckling 92 Points | The nose shows subtle cream, minerals and touches of white almonds, dried herbs and chalk. Almost bone-dry on the palate, with an ample mousse and very good weight and volume. Medium- to full-bodied with a subtle, medium-long finish. Nicely phenolic at the end. From organically grown grapes. Xarel-lo, macabeu and parellada. Nothing earthy here. Drink now or hold.

Winemaker Description 

Situated on the highest terraces of the River Anoia, the Vinya dels Fòssils vineyard has marine soils with a high fossil content. This characterises the structure and the soil composition of this vineyard. The carbonates are the component that provides the main source of typicity to this sparkling wine with a high saline expression. It is a sparkling wine with a unique identity and personality.

Winemaker Description 

Leonor is a 12 year old Palo Cortado Sherry and described as the wild child of Jerez. It shows a light mahogany color with golden tones and a slight orange rim. On the nose intense and complex with notes of hazlenut perfectly balanced with aromas of bitter orange and mature oak. On the palate powerful and intense with toasted notes yet smooth and silky. Due to its power and structure this wine is perfect with mature cheeses and stong meats such as venison. Serve chilled.

91 Points Wine & Spirits | Elegant and refined, with soft touches of candied cherries, walnuts and almonds, this is a textbook Palo Cortado. Aged 12 years in botas, it falls halfway between Amontillado and Oloroso in flavor, but much closer to the former. It needs only smoked trout.

90 Points Wine Enthusiast | This dry Sherry is a touch hot, with alcohol swirling around the glass, but there’s also complex, welcoming aromas of almond, apricot and toffee. The palate is appropriately rich, with flavors of caramel, toasted nuts and buttered toast. A finish with walnut, truffle and mushroom flavors urges contemplation.

Bright and pale pink in color, Muga’s 2025 Rosado is a wine of precision and freshness. The nose offers medium intensity with notes of stone fruit, peach skin, rose petals, and subtle floral and citrus nuances. On the palate it is fresh and balanced, with sharp, well-integrated acidity that gives it tension and length. The finish is refreshing and lingering, with echoes of stone fruit and delicate citrus. A wine shaped by the cool mountain origins of Alto Najerilla and the character of a demanding vintage.

Sourced from two distinct terroirs — the calcareous clay soils of Valle del Oja and the ferrous clay soils of Valle del Najerilla — the blend of Garnacha (60%+) and Viura is hand-harvested and fermented at controlled temperatures of 16–18°C for 15–20 days, then aged on fine lees for 16 weeks to build body, smoothness, and length. Muga remains the only bodega in Spain with its own master cooper and barrel makers.

Winemaker Description

The Cava Brut by Elvi is a highly drinkable sparkling wine made from grapes grown in Spain's fertile wine regions. The coloring is very light, and nearly translucent with a straw coloring and some greenness. The bubbles are nice and prominent, both pleasurable to the eye and mouth.

The aroma is complex, with many different notes. A touch of fruit, a touch of yeast, and a touch of almond swirl around in the nose. The texture feels nice in the mouth with lighter acids that fall away at the end and a shorter aftertaste. Very enjoyable and easy to drink.

The Wine Enthusiast 92 Points | This dark ruby-colored wine offers aromas of Luxardo cherry and toasted baking spices. It is very spicy at first sip as flavors of clove and mint leaf with a touch of black pepper hit the taste buds, followed by blackberry, cherry and raspberry flavors. Muscular tannins are balanced out by well-integrated acidity that stays around for a while. 

James Suckling 92 Points | Juicy and expressive Rioja with some dark spices, black earth and a hint of peppercorn to the cherries and plums. Fresh and bright on the palate with a medium body rounded by fine-grained tannins. Succulent and long. Consistent quality. The first year that there is some maturana in the blend. One of the few 100% Brancellao wines from Ribeira Sacra, reminiscent of a wine from Burgundy, aged for six months in new French oak barrels, with the freshness and expressiveness of a little known variety with huge potential and great distinction.

First, alcoholic fermentation takes place at a controlled temperature of 16-18oC, followed by malolactic fermentation, both in stainless steel tanks. First aged on its lees and later aged for six months in 300- and 500-litre French and Central European oak barrels.

Clean and bright with a surprising colour. Very intense nose with complex red fruit, spices, and the characteristic coffee and cocoa notes of the terroir. This wine has a pleasant texture and is bold and complex in the mouth, well structured and intense on the palate and extremely fresh, which makes it appealing at any time of year.

Moderately deep soils except for Marges which brings its characteristic freshness and youth. The Rigolet y Baja, terroirs which add the concentration are terroirs of Miocene marl earth which allows the vine to absorb only the quantity of water necessary for adequate growth.

They produced a little bit more in 2020, and the wine has less oak and less buttery sensations, a change that started with the 2017 vintage, which seems to have found its style harvesting earlier to retain freshness; it has 13.04% alcohol and a pH @ 3.23 and matured in larger oak containers, 500-liter oak barrels and some concrete for 12 months. Contino Blanco 2020 shows a very intense nose, marked by its aging in barrel. It is fresh and fruity wine, a true reflection of the identity of our vineyard. San Gregorio offers a Garnacha Blanca with great complexity and volume. The soils are clayey-calcareous, with medium stoniness, key for good drainage.

Celler Bàrbara Forés is a woman owned and operated winery located in the Terra Alta region of Catalonia, Spain. It was founded on the principles of agroecology and is known for its commitment to producing high-quality wines while respecting the environment. Uniting the efforts of three women, the winery's philosophy is rooted in sustainable viticulture and the unique terroir of the Terra Alta The wine is made with Morenillo from a single estate that has partly sandy soil but mostly a loamy texture. When the grapes have been manually harvested, they ferment in contact with the skins. Maceration lasts 21 days. After pressing, fermentation continues in stainless steel tanks, at a controlled temperature.

The wine is then aged for 9 months in clay amphoras.With the name Bàrbara Forés, the marriage of Carmen Ferrer and Manuel Sanmartín wanted to pay tribute to their great-grandmother Bárbara Forés, who was born in Gandesa on February 7, 1828. Bárbara Forés, the daughter of a wine merchant (Rafael Forés) and an agricultural owner (Maria Figueras), was a person of great character and had a decisive influence on her son Rafael.

Rafael Ferrer Forés, a pharmacist and illustrious winegrower, constructed the cellar of the manor house where he began bottling wine at the end of the 19th century. Bárbara Forés, therefore, represents respect and tradition in the production of wines, passed down from generation to generation for more than a hundred years in their house.
