Les Parcelles Bouzy XXII is the signature expression of Pierre Paillard's historic estate in the Grand Cru village of Bouzy. Based primarily on the 2022 harvest, this Pinot Noir–dominant Extra Brut Champagne balances the generosity and power associated with Bouzy's sunny southern slopes with the precision, freshness and mineral structure provided by its chalk-rich soils.
The Paillard family has cultivated vines in Bouzy for more than two centuries. Today, eighth-generation brothers Antoine and Quentin Paillard oversee an estate of approximately 11 hectares, farmed organically and situated entirely within this celebrated Grand Cru village on the southern side of the Montagne de Reims.
Les Parcelles XXII is composed of 80% Pinot Noir and 20% Chardonnay. The blend is based on 80% wine from the 2022 harvest, complemented by 20% reserve wine to add depth, harmony and continuity of style. The fruit comes from mature, south-facing vineyards in Bouzy, including Les Maillerettes, Les Mignottes and Les Mottelettes, planted over chalky soils containing a proportion of clay.
Fermentation takes place with indigenous yeasts in 350-liter oak barrels, followed by full malolactic fermentation. The wine remains in barrel during its initial élevage and then matures for 36 months on the lees after the secondary fermentation. Produced entirely from Meunier, Taissy 2020 was vinified and aged in oak barrels. A rare and beautifully expressive still red wine from the heart of Champagne, Les Mignottes is produced entirely from Pinot Noir grown in a single south-facing parcel in the Grand Cru village of Bouzy. Rather than undergoing a second fermentation to become sparkling Champagne, the wine is bottled under the Coteaux Champenois appellation, revealing the depth, fragrance and mineral character of Bouzy Pinot Noir in its purest form.
The Les Mignottes vineyard lies on the warm, fully exposed southern slopes of the Montagne de Reims. Its chalky limestone terroir contains a higher proportion of clay than many neighboring Bouzy parcels, helping the Pinot Noir achieve excellent ripeness while retaining the freshness and mineral definition characteristic of Champagne.
The vines are farmed organically, and yields are kept low to encourage concentration. The grapes are harvested by hand and vinified in a Burgundian style, using approximately one-third whole clusters and indigenous yeasts. Following a 15-day maceration, the wine is matured for 12 months in French oak barrels, with only a small proportion of new oak. It is bottled without fining or filtration, preserving its natural texture, aromatic detail and sense of place.

Medium to full-bodied, incisive and tightly wound, if the 2006 vintage was gourmand and demonstrative, the 2008 is slower to show all its cards. Built around racy acids and complemented by a pillowy mousse, this rendition of Cuvée Rare will reward a few years more on cork.

(Think Delamotte and Salon.) The 13th vintage for this cuvée, the 2013 Champagne Millésime is a blend is 70% Chardonnay with the rest Pinot Noir, with the majority of the blend coming from the Montagne de Reims Grand Cru and Premier Cru. A bright yellow hue, its aromatics are exquisite and well-balanced, with fresh notes of key lime, candied apple, fresh croissant dough, fresh pineapple, and honeysuckle. Medium to full-bodied, it fills the palate with a rounded and supple texture and a pillowy mousse. It’s long on the palate and has a silky personality as well as a long, pristine finish. It has fantastic balance of decadence and freshness, and I could drink this all day. It’s going to have a long drinking window.

A gorgeous whiff of reductive smokiness precedes a sea breeze and hints of toasted nuts. The palate is a picture of tautness, filigree foam, finesse and svelte poise. This wine is wonderfully pure and bracing, with hints of caramelized hazelnuts and almonds teasingly in the background, gaining definition from an oystershell saltiness. The longer you pay attention, the more happens in this wonderfully nuanced and sophisticated wine.
Decanter 95 Points | Initially cool and breezy on the nose, like sea spray and freshly sliced lemons. As it warms, it shows fresh pineapple, coconut, Sorrento lemons and a tiny touch of toast on the finish. This really is very youthful, taut and tingling, with very fine acidity. Lots of intrigue to come as it ages. 2013 was sunny in the early part of the season, but was also very cool. Harvest did not take place until October, the only time in the last 30 years that harvest has taken place in October. The grapes matured very slowly.

The Canals Canals family crafted this rosé cava from 85% Pinot Noir and 15% Garnatxa (Garnacha), following the Traditional Method — secondary fermentation in bottle with 24+ months aging on lees in their cellars. Certified organic.

The Wine Advocate 93 Points | The 2022 De La Finca comes exclusively from their own vineyards, 60% Xarel.lo, 30% Macabeu and 10% Parellada, and has the added complexity and nuance from a longer élevage, no less than 30 months in bottle with lees and closed with a cork after refermenting. It's bone dry, not adjusted, and sold as a brut nature. It has a bright, almost fluorescent yellow color and a very expressive nose with notes of yeasts and Mediterranean herbs, subtler, more complex and with smaller, more integrated bubbles and a vibrant, clean and precise palate, super tasty. It comes from the plots on slopes already classified by Pepe Raventós's grandfather. Here, they have lower yields, accentuated by the vintage, which is more marked in the wine, as it's always from the same plots. The whole clusters are pressed, looking for longer aging potential, and fermentation is in concrete, always thinking about a longer-lived wine. It's a generous wine from a generous year. 55,000 bottles and 1,000 magnums were produced.

Almost bone-dry on the palate, with an ample mousse and very good weight and volume. Medium- to full-bodied with a subtle, medium-long finish. Nicely phenolic at the end. Rémi Leroy is one of the Côte des Bar's most compelling young grower-producers. After completing graduate studies in oenology and viticulture in Bordeaux, Leroy returned to his family's vineyards in Meurville in the Aube — the southern reaches of Champagne, where Pinot Noir reigns and the soils bear a striking resemblance to those of nearby Chablis. He farms a selection of carefully chosen parcels across the villages of Meurville, Bergères and Fontaine using practicing-organic methods, with an emphasis on precision, transparency and minimal intervention in the cellar.
The Réserve Blanc de Noirs is made from 100% Pinot Noir sourced from vines approximately 30 years old. What sets these vineyards apart is the soil composition: approximately 60% of the fruit comes from Kimmeridgian clay-limestone — the same ancient seabed geology that defines the finest vineyards of Chablis — while the remaining 40% comes from the rarer Portlandian limestone soils found around Meurville. The interplay between these two soil types gives the wine both generous fruit and a firm, chalky mineral backbone.
The current release blends 85% from the 2022 harvest with 15% from 2021, adding complexity and balance while preserving the freshness and ripe red fruit character of the primary base year. Vinification and maturation take place entirely in stainless steel, preserving the clarity and natural character of the Pinot Noir. Malolactic fermentation is completed in full. The wines are generally bottled without fining or filtration. After secondary fermentation in bottle, the Champagne spends approximately 24 months aging on its lees and is disgorged at an exceptionally low dosage of approximately 1 gram per liter — a near-zero addition that keeps the wine bone dry and allows the fruit and mineral terroir to speak without interference.
The wine opens with aromas of raspberry, wild strawberry, red cherry and crisp red apple, followed by blood orange, citrus peel, dried flowers and fresh bread. Subtle hints of almond, chalk and gentle spice emerge with air. The palate is energetic and finely textured — a lively mousse carries ripe red fruit and citrus freshness, while Pinot Noir provides structure, depth and a lightly savory character. Cranberry, orange peel, toasted grain and green almond lead into a dry, persistent finish marked by limestone minerality and a refreshing saline quality. Immediately expressive, yet with enough concentration and structure to reward short-term cellaring.
