Winemaker Description 

Barbera, along with Nebbiolo and Dolcetto, is widely planted throughout Piemonte. Many Barolo and Barbaresco producers will also make a Barbera mainly because the aging requirement is far shorter allowing them to see a profit from the harvest earlier. In the commune of Nizza, the Barbera grape steps into the spotlight and takes center stage. This is where Barbera reaches its heights of glory.

The Frasca family has 22 hectares of vineyard in Nizza, with vines averaging 30 years of age. Their 2020 Barbera Nizza DOCG opens with an inviting bouquet of dark cherries, blackberries, and plums, intertwined with notes of violet, tobacco, and a hint of vanilla. On the palate, it is full-bodied and rich, showcasing intense flavors of ripe black fruits, licorice, and a touch of dark chocolate, balanced by firm tannins and vibrant acidity. The finish is long and complex, with lingering hints of fruit, spice, and subtle oak nuances.

We select the fruit for our alcohol-removed Chardonnay from California's finest marine-influenced vineyards, where cool breezes and fog allow the grapes to ripen slowly and evenly as they develop rich flavors and complexity. Our winemakers carefully craft this Chardonnay using traditional methods; then our exclusive spinning cone process gently removes the alcohol while preserving the wine's delicate aromas and flavors.

Freemark Abbey Cabernet Sauvignon — Napa Valley 2022

Freemark Abbey is one of Napa Valley’s most historic estates — a winery with roots stretching back to 1886 and a reputation built on classic, terroir-driven Cabernet Sauvignon. Winemaker Kristy Melton sources from a diverse portfolio of estate vineyards and carefully selected purchased fruit across multiple Napa appellations and elevations — including the legendary Bosché Vineyard, Orchard Vineyard, Red Hen Vineyard, Colline, Henrickson, Carpenter, Red Barn Ranch, Castle Rock, and Atalon — to craft a wine that is classic, balanced, and genuinely complex. The 2022 vintage produced approximately 11,000 cases, with a blend of 89% Cabernet Sauvignon, 8% Cabernet Franc, 2% Petit Verdot, and 1% Merlot, aged 20 months in French oak with 47% new barrels. Harvest ran from August 13th through October 14th, 2022. Alcohol: 14.5%. pH: 3.66.

The color is a deep, concentrated ruby. The nose is classic and inviting: dark chocolate, black forest fruits, oak spices, leather, and cedar, with bright aromas of ripe cherries and sunny strawberries adding lift and freshness. On the palate, it is full-bodied and soft — blueberry compote, espresso, olive, dried herbs, and black pepper, with fresh red currants and light baking spices woven through a velvety, well-structured mid-palate. The tannins are integrated and approachable, making it enjoyable now while remaining capable of cellaring well for years to come.

This Napa Valley Merlot is sourced from a combination of high elevation mountain sites as well as wonderful benchland vineyards around the valley. Frog’s Leap Flycatcher 2023 is a California red blend crafted to showcase the diversity and vibrancy of the state’s wine country. It’s designed as a fresh, approachable, and food-friendly wine made from a mix of grapes sourced “with intention” from heritage vineyards across California, reflecting different terroirs beyond the winery’s Napa home.

P’tit Sainte Maure d’Antan — Fromagerie Poitou Chèvre, Deux-Sèvres, Poitou-Charentes, France

The Loire Valley is the spiritual home of French chèvre — and Poitou-Charentes, just to the south, is where the tradition runs deepest. Fromagerie Poitou Chèvre has been crafting goat cheeses in the Deux-Sèvres with the same meticulous care for generations, and the P’tit Sainte Maure d’Antan is their most emblematic expression. Shaped in the traditional cylindrical log form and hand-molded in individual molds, it is aged between 12 and 25 days — long enough to develop a natural rind and a white, creamy paste with a smooth, melting texture, but short enough to preserve the fresh, lactic brightness that makes great chèvre so irresistible. This is French goat cheese at its most classic and most honest.

When young, the flavour is delicate and slightly acidic — clean, fresh, and lactic at its core. As it refines toward the 25-day mark, richer, earthier notes emerge: a gentle nuttiness, a whisper of mushroom, and a beautifully balanced complexity that speaks directly of the Poitevin terroir. Miho Imada, one of Japan’s only female brewery owners and toji (master brewer), devoted over 10 years of her life to reviving Hattanso — an extinct heirloom rice variety from the Akitsu region of Hiroshima that had disappeared from cultivation entirely. She learned to grow it, learned to brew with it, and then made a deliberate choice to mill it less than most Junmais, believing that minimal polishing best expresses the full flavor, balance, and complexity of this ancient grain. Fulvi Pecorino Romano del Lazio DOP — Nepi, Lazio, Italy

Fulvi is the benchmark for what Pecorino Romano was always meant to be — and it is categorically different from the mass-produced versions most people know. Made from 100% whole, unpasteurized sheep’s milk collected from Sopravissana and Siciliana breed flocks in the Roman countryside, and produced in Nepi just 15 miles north of Rome, this is an ancient cheese with an unbroken lineage. Aged a minimum of 10 to 12 months and coated in traditional black wax, Fulvi carries the DOP designation that guarantees its Lazio origin and production standards. The key distinction: Fulvi uses whole milk, not skimmed — giving it a higher butterfat content, a less dry texture, and a less aggressive saltiness than Sardinian Pecorino Romano. The result is a cheese that is rich, complex, and deeply versatile: magnificent grated over pasta, and equally rewarding eaten as is.
