Audrey Frick of Jeb Dunnuck writes 90 Points | The NV Champagne Grand Brut Rosé pours a medium salmon hue and is equal parts Chardonnay and Pinot Noir (8% of which is red wine). This Grand Rosé has a high percentage of Chardonnay, which creates freshness and precision, complemented by Pinot Noir with delivers very fine and crunchy fruit. With 4 years minimum ageing in the cellars, this Rosé balances between freshness and fruit without masking the wine’s character and purity. The nose reveals aromas of citrus and strawberries with subtle notes of red berries and spice. The palate is well-built with a constant balance between the tension of the acidity and the smoothness of the fruit, while the finish shows a nice roundness and lovely minerality.

Our GOTT 2022 Napa Valley Cabernet Sauvignon offers aromas of black cherry, blackberry, black currant, and cocoa, with subtle notes of cedar and sweet tobacco. On the palate, rich dark fruit flavors lead to complex, well-structured tannins on the mid-palate and are balanced by a long, elegant finish with delicate hints of dried herbs.

About the Cheese

Hornbacher is a raw milk washed-rind cheese handcrafted at Käserei Fritzenhaus in the Emmental region of Switzerland. Aged and selected by Gourmino — one of Switzerland's premier affineurs — this is a cheese of remarkable depth and character, made from the rich fresh milk of local cows and brought to peak maturity by 4-time World Cheese Champion Michael Spycher.

Winemaker Description

The 2018 Blank has a beautifully layered dark nose of black cherry, aromatic black tea, blackberry bramble, rose oil, black licorice, and violet candies. The silky entry opens to flavors of black fruit, culinary bay, and bakers’ chocolate seamlessly underpinned by velvety tannins and lovely texture through to the finish. This wine will age effortlessly for at least 20+ years.

Jeb Dunnuck 95 points | I was able to taste two wines from Grace Family both made by the incredibly talented Helen Keplinger who has been at this estate since 2014. The 2018 Cabernet Sauvignon Blank offers a beautifully pure elegant style in its darker currant and blueberry fruits as well as notes of iron minty herbs tobacco and lead pencil. Soft supple medium to full-bodied and as seamless as they come drink this singular beauty any time over the coming 20 years. I love its mid-palate as well as its tannins.

James Suckling 98 points | So much graphite and dark fruit here with some iron and spice. Lead pencil, roses and light mint, too. Full-bodied and wonderfully seamless with dusty tannins and a lightly balsamic finish. Drinkable now, but better after 2025.

Winemaker Description 

The 2018 Grace Family Vineyard Cabernet Sauvignon exudes gorgeous dark red fruit, black cherry, black currant, accented by notes of bittersweet cocoa, black licorice, cigar box, resin, pink peppercorn, rose, and a hint of mint which offers freshness and lift.

The palate is broad and plush with layers of vibrant dark red fruit and spice seamlessly underpinned by soft, fine tannins and an extremely long palate. Drinking beautifully now, this wine will age at a glacial pace for years to come.

Grafton Village “Shepsog” — Cave-Aged Cow & Sheep Milk Cheese, Vermont

Grafton Village Cheese Company has been one of Vermont’s most celebrated artisan cheesemakers since 1892, and Shepsog is their most intriguing and complex creation. The name is a portmanteau of “sheep” and “dog” — a nod to the pastoral Vermont tradition — and the cheese itself is equally playful and multifaceted. Made from thermized cow and sheep milk and cave-aged for 5 to 7 months, Shepsog is a firm cheese of remarkable personality: it draws simultaneously on the traditions of Basque sheep cheeses, Alpine styles, aged Cheddars, and aged Goudas, yet all of these influences cohere into something entirely its own — approachable, appealing, and endlessly interesting. The texture is firm and smooth with the density that comes from careful cave aging. The flavor is layered and complex — nutty and slightly sweet from the sheep milk, with the savory depth of Alpine cheese, a hint of Cheddar tang, and the caramel richness of aged Gouda. The Wine Advocate 93 Points | Blackberries, licorice, and melted asphalt stand out in this full-bodied, beautifully made vintage port's moderately intense bouquet. It is not one of the great Graham's ports, and is less sweet than normal, but it is full-bodied, rich, concentrated, and impressive. Anticipated maturity: 2004-2025.

This excellent Vintage has an intense colour with a deep, purple rim. On the nose shows a luscious ripeness with attractive floral aromas and undertones of black cherry. On the palate, a typically Graham's full-bodied structure, packed with layers and layers of fruit and firm tannins. The very long, accomplished finish indicates a great Vintage for long-term ageing.

Gramona La Cuvée Aliances — Corpinnat, Catalonia 2022

Gramona is the undisputed standard-bearer of Corpinnat — the prestigious new appellation born from a breakaway group of the finest traditional-method sparkling wine producers in the Penèdes, committed to stricter quality standards, longer aging, and a deeper expression of Catalan terroir. Founded in 1881 in Sant Sadurní d'Anoia, Gramona has farmed biodynamically for decades and is one of Spain's most respected sparkling wine houses, producing wines that rival the finest Champagnes in complexity and longevity. Winemaker Description 

The Gran Moraine Vineyard is the source for some of Oregon's finest Pinot Noirs, with this being no exception. Tucked into the foothills of the Coastal Range, the vineyard is cooler than most, and delivers Pinots with fresh pure red fruit, fine tannins and chalky acidity. Winemaker Shane Moore ages this Pinot Noir in large, mostly used oak barrels to lend subtle spice without overpowering the delicate fruit.

The Wine Advocate 92 Points | The 2021 Pinot Noir Yamhill-Carlton is bursting with pomegranate and cranberry fruit, plus accents of potpourri, licorice and autumn leaves. The medium-bodied palate is silky and bright with concentrated, layered flavors and a long, spicy finish.

Granbazán Albariño Etiqueta Ámbar — Rías Baixas, Galicia 2024

Granbazán is one of the founding estates of modern Rías Baixas, pioneering the region's reputation for world-class Albariño since the late 1980s. The Etiqueta Ámbar — the Amber Label — is their most celebrated wine, famously served by the glass at El Bulli for many years and the wine that put Granbazán on the international map in the 1990s. Sourced from a blend of estate fruit and grapes from long-established family growers in the Salnés Valley, it receives more active bâtonnage and extended lees aging than most Albariños, adding a richness and textural depth that sets it apart from the category. Winemaker Diego Ríos, who trained in the Mosel Valley working with Riesling, brings a precision and mineral focus that is unmistakably his own.

The nose is classic and inviting: ripe peach, citrus, and white blossom with a signature salty, briny minerality that speaks directly to the Atlantic coast. On the palate, it is medium-bodied and sappy with beautiful lees-derived texture, layered fruit, and a long, tapering finish of saline freshness. Look for a warm, honeyed flavor and a nice burst of orange peel and spicy cinnamon and ginger on the long finish.

Wine Spectator 92 Points | This graceful, lighter bodied Chardonnay rested in neutral French oak for 12 months after partial malo. It is brisk and tangy, with aromas and flavors of peach skins, lemon drops, chamomile, green tea and chalk. This nimble wine wants to tango, and you should accept.

Cherry red color of medium intensity, medium layer. The nose is intense, with notes of jelly beans and red fruits combined with mineral notes of flint and a light background of toast. At the entrance to the mouth we will find soft tannins, with high volume and fat, well compensated by good acidity and a general feeling of verticality. Red fruits and mineral notes stand out, resulting in a long and intense aftertaste.
