Production Description 

Aged no less than 36 months, our Extra Añejo drinks like a bourbon-lover’s Tequila. Rich and buttery smooth from start to finish, this very special Tequila offers notes of chocolate and coffee. We artfully blend bourbon-cask and cognac-cask aged Tequila with it for an unrivaled, sophisticated taste.

Producer Description 

Distilled from estate-grown Blue Weber agave from 300 ha lowland site, practicing organic farming. Agave are roasted at 120° C for 15 hours and allowed to rest for another 15 hours. Fermented in El Llano's original cement vat with house yeast for six to seven days to about 4-5% abv. Twice distilled in stainless steel pot stills with interior copper condenser by Eduardo Orendain before being aged in ex-Bourbon barrels for 11 months.

Featuring fruity-sweet flavor notes, the tighter cut of the distillate ensures less acetone flavors and puts an emphasis on a mid-palate wash of mint, pepper, vanilla, and ripe apple and plum.

The Blanco is hand-crafted in small batches: agave hand-picked by jimadores, cooked in traditional brick ovens, and distilled to a lower ABV than most blancos — a deliberate choice that results in a richer, more aromatic flavor profile without sacrificing smoothness. Pearl-silver in the glass with a medium body, it opens with cooked agave aromas, mild grassy and fruity notes, and delicate white flowers — chamomile and lemon blossom. The palate is clean and agave-forward, with tropical and citrus fruit and mineral accents, finishing smooth with floral and citrus notes.

Wine Enthusiast 94 Points | This reposado is rested six years in American oak (more than required for reposado), yet because it was aged in a vessel larger than the 600-liter maximum, it still gets to bear the reposado label. The liquid offers distinctly sweet aromas of vanilla, maple and dried fig. The palate echoes those tones, layering on clove, allspice and cayenne.

At PM Spirits, we're always on the lookout not just for superlative spirits, but also for like-minded people. When we met Jose Luis Gutierrez, we knew right away he was someone special.

Having spent years working both independently and for the Mexican Trade Commission throughout Europe – promoting and establishing reciprocity of the Tequila Denomination of Origin – Jose Luis later started working closely with producers in Jalisco in order to source and provide quality Tequila directly to European brands and bottlers.

We had been wanting to collaborate with someone on bottling a PM Spirits Project Tequila for quite some time. Jose Luis' passion for and knowledge of the spirit was apparent to us from day one, and we could think of no better person to have worked with to make this project happen. Thank you, Jose Luis.

This Tequila is the product of one single oven or horno. It was distilled from 100% estate-grown Blue Weber Agave. Bottled at two strengths – 80 proof and still strength 110 proof. No additives.

It is also a way for us to thank all the people who have been part of this journey: the talented artisans, all those who are part of the Clase Azul family, and, of course, everyone who has brought a small piece of our Exquisite Mexico into their homes.

To celebrate our legacy, we’ve created our first decanter completely painted in our distinctive cobalt blue color. Inspired by dandelion seeds being carried by the wind, its feathered motifs embody Clase Azul México's expansion across the world. Twenty-five of the brushstrokes that grace the surface of the decanter have been hand painted in platinum; one for each year of our history.

The tequila created for this edition pays homage to our signature Clase Azul Tequila Reposado. Our Master Distiller, Viridiana Tinoco, reimagined its creation to give it a special touch.

Part of the agave used to make this blend was milled using a traditional stone mill called a tahona, a practice that dates back to the origins of tequila.

In addition, the fermentation process was extended to accentuate the liquid’s citrus and fruity notes. This blend was aged for eight months in two different first-use American whiskey casks, each one imparting its own distinct and rich tasting notes.
